Plants often grow in unexpected places, often without us realizing it, but they are often very beneficial to our health.
One such plant is purslane, which usually grows underground but is a medicinal herb, also known as “cat’s tongue” or “the perishable one”.
Purslane usually grows in spring and summer and is characterized by its juicy, fleshy leaves rich in fiber.
Purslane salad with yogurt
Ingredients:
1 bunch of fresh purslane
200 g plain yogurt
1 clove of garlic (optional)
2 tablespoons of olive oil
Juice of half a lemon
Salt to taste
Preparation:
Wash the purslane leaves thoroughly and drain.
Put the yogurt in a bowl and finely chop or press the garlic, then add it to the yogurt.
Add the lemon juice and olive oil to the yogurt and mix well. Add the purslane leaves, salt and mix well. Serve the salad chilled. Ingredients for purslane soup: 1 bunch of fresh purslane, 1 onion, 1 potato, 1 carrot, 2 tablespoons of olive oil, 1.5 liters of vegetable broth, salt and pepper to taste.
